About the Recipe
I know cottage cheese can be off putting, but you'll never know it is in there in this recipe! The fact is that everything is blended together so it is quick, easy and kids love it.
300g frozen spinach, kale, silverbeet
250g cottage cheese
1c grated cheese
juice of one lemon
salt and pepper to season
pastry for pie (pre rolled flaky sheets or block)
Grease and line a deep pie dish with pastry.
Make sure the spinach etc is defrosted (can use fresh) and squeeze out excess liquid.
Put all the ingredients (except for pastry) in food processor and blend until smooth.
Top with pastry, I use a lattice design to cut down on pastry.
Bake at 200 degrees Celsius for 35mins until the pastry is golden.
Leave to cool for about 15mins as the mixture will set more firmly during this time.
