Who doesn't like peanut butter! Adding peanut butter is a great way to up the protein content of the meal and add a bit of flavour to boring old chicken drumsticks.
Ingredients
8 chicken drumsticks
1/2c crunchy peanut butter
1T coconut oil, melted
2T soy sauce
1t paprika
1 clove garlic, minced or finely diced
1t ginger (or use fresh)
300g beans
2 carrots
1 broccoli
1/4c peanuts
Preparation
Preheat oven to 200 degrees Celsius.
Combine the peanut butter, oil, soy sauce and spices in a baking dish and mix well. Add the chicken and give the drumsticks a good coating.
Bake in the oven for 15mins with the chopped carrots (you can also use potatoes but just adjust the cooking time as need be for different veggies - you want everything to be ready at the same time).
While cooking prepare the beans and broccoli. After 15mins add these and the peanuts to the baking dish and cook for a further 10mins.
Remember to test the chicken and make sure the juice runs clear.
Can serve with a wedge of lemon or lime
