Not so spicy chicken

About the Recipe

I modified this recipe from Jamie Oliver's 15 min meals. So you know it's quick and easy to prepare! However the spicy Cajun version was not so great for little fussy eaters!

Ingredients

4-5 chicken breasts

1T paprika

1T honey

1T soy sauce

1 can corn

1-2 tomatoes, diced

2 spring onions

lemon juice

800g (or two large) kumara, sliced

2T sweet chilli sauce

300g frozen beans

20g feta for serving

bacon (optional)

Preparation

  1. Preheat oven to 180 degrees Celsius.

  2. Combine the paprika, honey and soy sauce. Add the chicken and give a good coating. Put a little oil in a baking tray and add the coated chicken.

  3. Bake in the oven for 20mins.

  4. While cooking put the sliced kumara in a pot of water and boil for a few mins until soft. Draft and mash with the sweet chilli sauce. Return pot to a low heat to keep warm.

  5. To make the salad drain the corn, finely chop the spring onion. Add to a bowl with the diced tomatoes. Drizzle lemon juice over the salad.

  6. If you are feeling particularly fancy you can also char the corn in a fry pan first. You can then use the same pan to cook the diced bacon (or use bacon bits). Add the frozen beans to the pan with the bacon to cook through.

  7. Remember to test the chicken and make sure the juice runs clear.

  8. To serve make a base of mashed kumara, place a piece of chicken on the top. Crumble over some feta and add a spoon full of beans and bacon. Serve with the corn salad.

  9. I cut a few slices of my chicken for my toddler instead of giving her a whole one.
