Save money and cut down on the sugar and plastic wrapping with these handy bars for the school or office lunch box!
1 cup pitted dates
1 cup rolled oats
1/2 cup finely chopped almonds
1/4 cup seeds (pumpkin, sunflower, chia, sesame etc)
1 tsp ground cinnamon
1/4 cup melted coconut
Add dates to a bowl and pour boiling water over them. Let soak for 10 minutes.
Combine oats, flaked almonds, seeds and cinnamon in a large bowl.
Add dates and 2 tbsp of their soaking water to the processor and blitz on high until they are well broken up into a paste.
Add in the coconut oil and blend some more until you have a smooth(ish) mixture.
Pour date mixture into the bowl with the dry ingredients and mix thoroughly.
Spread mixture out into a 20cm baking tin lined with baking paper and pop in the freezer for an hour.
Take out, and slice. Store in an airtight container in the fridge or freezer.
