About the Recipe

Ingredients

Coconut oil or butter for greasing

1 large zucchini

1c peanut butter or nut butter

1 egg

1/2t vanilla essence

1/4c rice malt syrup

1t cinnamon

1/4t nutmeg

1t bicarb soda

100g dark choc (70% or more)


Preparation

  1. Preheat the oven to 180 degrees Celsius.

  2. Grease a 23cm square baking tin.

  3. Grate the zucchini into a large bowl, then add the rest of the ingredients and mix well.

  4. Pour into the baking tin and bake for 35mins or until a skewer comes out cleanly.

  5. Cool in the tin then turn out and cut into approx. 16 squares.
