About the Recipe
This recipe has a veggie secret!
Coconut oil or butter for greasing
1 large zucchini
1c peanut butter or nut butter
1/2t vanilla essence
1/4c rice malt syrup
1t bicarb soda
100g dark choc (70% or more)
Preheat the oven to 180 degrees Celsius.
Grease a 23cm square baking tin.
Grate the zucchini into a large bowl, then add the rest of the ingredients and mix well.
Pour into the baking tin and bake for 35mins or until a skewer comes out cleanly.
Cool in the tin then turn out and cut into approx. 16 squares.
