Choc caramel date Bites

About the Recipe

These will satisfy your chocolate craving! They still have a lot of natural fruit sugars in them so do try not to eat the whole batch at once!

Ingredients

2c dates

3/4c coconut oil

1/4c cocoa powder

1t vanilla essence

2T extra coconut oil

1/2t salt

1/4c coconut flour


Preparation

  1. Place dates in a jug or glass bowl and cover with boiling water for 30mins to soften.

  2. Process the dates, vanilla, extra coconut oil and salt in a food processor until smooth. Put into a bowl, cover and put in the freezer for about 30mins until firm (to roll).

  3. Meanwhile, melt the coconut oil in a small saucepan, add the shifted cocoa powder and mix well. Leave off the heat to thicken slightly.

  4. Line a tray with baking paper. Put the flour in a small bowl. Roll out the date mixture into balls (one tablespoon full sized). Using a spoon, dip the balls into the chocolate mixture, place on tray to set. I also drizzle any remaining chocolate over the balls on the tray to make sure I get a nice thick coating.

  5. Freeze for at least 10mins and store in an airtight container in the freezer.

Note: the coating may appear whitish when set, don't worry! This is just the coconut oil.
