Choc banana Iceblocks

About the Recipe

Keep a batch in the freezer for a quick go-to when the kids start demanding treats. Makes for a quick and no fuss dessert.

Ingredients

2 bananas chopped into thirds

6 popsicle sticks

1/4c melted coconut oil

1T pure maple syrup

1/2T honey

1/3c cocoa powder

1/4c chopped roasted peanuts (or other nut)

Preparation

  1. Line a tray with baking paper. Push a popsicle stick into each banana piece, put on tray and freeze for an hour.

  2. Melt coconut oil in a small saucepan. Add maple syrup, honey and cocoa powder and mix until smooth. Transfer into a small jug or bowl for dipping.

  3. Put the chopped peanuts in a small bowl for dipping.

  4. Dip the ends of the bananas into the chocolate mixture and then the nut mixture. Stand upright on the tray and put back into the freezer to set.

  5. Tip: I drizzled the extra choc mixture over the bananas to make sure they got a good coat!
