Choc & date caramel Slice

About the Recipe

A healthier take on a favourite slice of mine. The dates keep the slice sweet and are still a treat, but still filling and satisfying!

Ingredients

Base

1/2c dates (soaked in hot water)

1c almonds

1 1/2T coconut oil, melted

1/4t salt

Date Caramel

1c dates (soaked in hot water)

1/2c pure maple syrup

1/3c crunchy peanut butter

1/4c coconut oil, melted

Choc Topping

1/4c cocoa powder

1/4c coconut oil, melted

2t pure maple syrup

Preparation

  1. Line a 19cm square pan with baking paper. Drain the dates. Process base ingredients in a food processor until smooth(ish). Press evenly into the lined tin and put in freezer.

  2. Then process the date caramel ingredients in a food processor until smooth. Spread over the base and put back into the freezer to set.

  3. After about 30mins, make the choc topping by melting the coconut oil and adding the other ingredients. Whisk until smooth and pour over the caramel. Put back into the freezer to set for about 30mins.

  4. When set, take a hot knife and cut into about 16 pieces. Keep in an airtight container in the fridge or freezer.
