About the Recipe
Another breakfast idea that also doubles as a handy on the go snack. You can adjust the sweetener to your personal taste.
1 c oats
1 c mixed nuts (such as almonds, cashews, walnuts)
1/4c pumpkin seeds
1/4c sunflower seeds
1/4c rice malt syrup
1/2c coconut flakes/threads
1/2c peanut butter (or other nut butter)
1/4c melted coconut oil
Chop nuts and mix dry ingredients together (except for the coconut flakes).
In a separate bowl add the peanut butter, coconut oil and mix well.
Coat the dry ingredients with the wet ones.
Spread out onto an oven tray and bake in the oven for 5mins. Then add the coconut flakes and bake for a further 5-10mins, stirring every few mins until evenly golden.
Serve with fruit, yoghurt and milk
