Cauliflower Mac n Cheese

Ingredients

1 cauliflower

1/4c olive oil

8 garlic cloves

2 1/2t salt

500g packet of pasta shells or spirals

2 1/2c water or stock

1/2c cashews

1T lemon juice

pepper to season

bacon or shredded chicken (optional)

grated cheese

Preheat oven to 180 degrees Celsius.
Cut the cauliflower into florets and place on an oven tray with the garlic cloves. Drizzle with olive oil and 1/2t salt (the salt helps absorb all the water that will come out of the cauliflower). Bake in the oven for about 30mins.

At the same time, cook the pasta according to the packet directions. Drain and return to the pot but off the heat.

If using bacon or chicken then cook/prepare this now. Leave out to keep the dish vegetarian. 
​
Put the cooked cauliflower in a food processor with the water, cashews, lemon juice and salt. Blend until smooth. Add seasoning to taste.
​
Add the sauce to the pasta pot and coat. Add the bacon/chicken. 
​
Serve and top with grated cheese.
