Spanish eggs

About the Recipe

I love this recipe because it is quick and easy. The perfect recipe to make when you rush in the door at 5pm!


6-8 eggs

1t paprika

1/2t ground turmeric

1/2c cream

small bunch of chopped parsley

1t salt

pepper to season

1T butter

100g halloumi or chorizo

1 tomato, chopped

1/2 c pitted olives, sliced

1t mustard (any you like)

1t apple cider vinegar

2T olive oil

1/2 red onion, finely diced

2T pumpkin seeds

1 bag baby spinach


  1. Pre heat the oven grill to about 200 degrees C.

  2. Whisk the eggs then add the cream, spices and herbs to the eggs and whisk further.

  3. Pour into an oiled oven proof pan and cook over a medium heat for about 5mins. Do not stir.

  4. While the eggs are cooking, sprinkle the copped tomato, olives and halloumi (or chorizo) over the eggs.

  5. Put the pan in the oven and grill for about 5mins until golden brown.

  6. While the eggs are cooking, mix the spinach, onion, and seeds in a bowl. In a small jar, shake up the oil, vinegar and mustard to make the salad dressing.

  7. Pour over the salad and serve with the eggs.
