Sierra's Trail Mix Oat Energy Bars

About the Recipe

This will save you money and packaging, plus this recipe is much better for you than commercial muesli bars! A great one for the office or school lunch box too.

I personally use them for a pre or post training snack, or for a dessert for my daughter.

Ingredients

  • 2 c rolled oats

  • 1/2c honey or brown rice syrup

  • 1/3c melted coconut oil

  • 1/3c peanut butter

  • 1/3c chopped almonds

  • 1/3c pumpkin or sunflower seeds, or a mix of both

  • 1/4c chia seeds (optional)

  • 1/2c cranberries or other dried fruit

  • 100g dark chocolate (I use 85%)

  • 1/2t salt to preserve

Preparation

  1. Tip all the dry ingredients into a large mixing bowl and mix together.

  2. Melt the coconut oil. You may also need to melt the honey and soften the peanut butter, depending on what sort you are using.

  3. Tip the wet ingredients into the dry and mix together with a wooden spoon. The mixture should be wet and feel like it will fold its shape.

  4. Line a 20cm x 20cm baking tray and tip the mixture in. Firmly press the mixture down with the back of a spoon or spatula. You will want it as firm as you can get it so it doesn't fall apart.

  5. Put in the fridge to set for 20mins. No baking required!

  6. After 20mins, melt the dark chocolate and spread a line layer over the top of the muesli mixture. Put back in the fridge to set.

  7. When set you can cut into 16 bars and keep in an airtight container in the fridge or freezer.
