About the Recipe
This recipe is great for sneaking an extra veggie into the kids' diet! They'll never guess there is a veggie in this one.
Just remember to make the night before.
Ingredients
1/2 c rolled oats
1T chia seeds (optional but helps thicken the mixture)
1 1/2 c milk of your choice
1t vanilla essence
1 large carrot, grated
1t cinnamon
1/2t ginger
pinch of nutmeg and salt
1/2 frozen banana
1t rice malt syrup
Yoghurt, coconut and nuts to serve
Preparation
Blend everything apart from the yoghurt, coconut and nuts until smooth.
Pour into two jars/cups and leave to soak in the fridge - ideally covered.
When ready to eat add yoghurt, coconut and nuts if you like.
