About the Recipe
If you have an early start and need breakfast on the go, then this is a good little recipe to have in your back pocket. Can also double as a snack or dessert.
2c milk (of your choice)
2 1/2c oats
1/4c chia seeds
any other nuts or seeds you like
2c blueberries (I used frozen)
Mash the banana then add eggs and milk and whisk to mix.
Then add oats, coconut, chia seeds and any other seeds that you want to use, pinch salt, and cinnamon.
Mix it all up then add the blueberries or similar. Mix and put into a lined baking tin (20cm by 20cm) and bake for about 30mins at 160 degrees.
Serve with dollop of yogurt and peanut butter.
Tip: It is important to keep this slice in the fridge or freezer as it will spoil if left in the cupboard after a few days.
